My guests today are Bev Magtanong and Jelynn Malone. They are the founders and owners of Mostra Coffee which is thriving. They’ve won prestigious awards like 2020 Roast Magazine Micro Roaster of the Year. They have an expansive beer collaboration program that spans the entire country. They recently opened a second location called the 4S Ranch. In the past seven plus years Mostra has gone from an idea-not one that was originally to open a roaster-to a reality.
In our conversation we talk about what motivates them to give back, how their heritage has been infused into their business, the pressure that comes with winning awards and how they allow their human-ness, their relationships and awareness of others inspire their business.

We've really ran this business on pure intuition…And being emotional and being compassionate and being empathic, and all of these things that sometimes in the business world is considered negative….that has really been the difference maker for us, and almost the secret sauce for us running Mostra.

Bev and Jelynn have a unique background considering their current status as coffee entrepreneurs and innovators. Bev performed professionally as an Opera Singer, and ran her own voice and music studio. Jelynn worked in both television and film as a host and actor. It was on a trip to the Philippines that the two women started considering creating a business together that would provide them a platform to give back in their community back home, and also around the world. So far, so good.
Back home an opportunity (that ended up not coming to fruition) to take over a cafe space led to a meet-up with co-owner Mike to learn more about what coffee can be how diverse the flavors may taste became the beginning of what would ultimately become this successful partnership that focuses on quality by sourcing beans directly from farmers in the Philippines, giving back to the San Diego community and the coffee industry with a wide variety of giving and grant programs.

Just a reminder this show was recorded prior to the current California Health Order closing hospitality businesses to indoor dining due to the raging COVID-19 pandemic. During our chat Bev and Jelynn were sitting at a table in their Carmel Mountain cafe. The sounds of coffee drinks being made and customers picking up orders for take away can be heard in the background. Honestly, it was a little emotional for me to listen to the sounds while editing the show. It has been a long year, and I’m looking forward to a time in the future when sitting in a cafe, taking in all the chaos, drinking a coffee, is possible once more.

COFFEE VOCABULARY
Con Panna: An esspress “with creme” in Italian. Served in a demitasse glass.
Coffee Percolator: A type of pot used for the brewing of coffee by continually cycling the boiling or nearly boiling brew through the grounds using gravity until the required strength is reached. Percolation is also used to make espresso, but by adding pressure to force water through ground coffee beans.
Coffee Year: The “Coffee Year” begins on October 1st because it is when most countries begin harvesting that seasons coffee beans. It also the time of year coffee consumption goes up possibly due to the desire for hot drinks during colder months.
