I was introduced to Coffee Conspiracy Company by Mateo Nunez (Thoughts & Process Coffee) after his coffee was featured on Eddie’s cold brew bicycle. I don’t think Mateo realized it, but I’m a bicycle guy. For more than ten years, I was a full-time bicycle commuter, and I’ve even worked on a bike.

My first job in San Diego was riding a cargo tricycle filled to the brim with samples from a local organic dog food company. I would ride from my home to all the dog parks in the beach communities handing out samples and petting dogs. It is up there with the best jobs I’ve ever had.

The point being is I’m always excited when someone turns to the bicycle when pursuing an entrepreneurial effort the way Eddie has. His business is unique in more than just the number of wheels it is on. He has narrowed his coffee bike cafe offerings to just two* offerings—cold brew and cold lattes on draft.

Eddie’s currently working to transition his brand identity to be more of an e-commerce retailer with the bike cafe as his daily customer engagement. It’s a reminder that an entrepreneur needs to continually pivot to meet the needs of their customers and bottom line.

  • Dan Streetman is the founder of Bird and Bear Coffee Company. Eddie credits him with enabling him to learn how to roast coffee for his company.

  • Breve is an Italian word for short or brief, and breve coffee drinks are espresso with a slightly smaller amount of steamed half and half instead of traditional milk. The half and half—which is often a mix of whole milk and cream—creates a rich, creamy micro-foam and a naturally added sweetness. 

    If you just order a breve, your barista will likely default to a latte so be sure to be specific if, like Eddie, you’re looking for a variation of the cappuccino.

  • At Coffee Fest LA, Eddie is joining the Ground Control team on the vendor floor. Ground Control is a new company offering a batch coffee brewer that can produce a wide range of coffees, including hot coffee, cold brew, and even iced lattes. This video from Prima Coffee Equipment goes into the specifics much more in-depth than I can without actually having the machine on hand!
